Roasted Duck Breast with Cranberry Apple Compote Print Recipe

Ingredients:
(4) 8 ounce duck breasts
1/2 cup raisins
1/2 cup whole cranberries
2 Red Rome apples diced
2 tablespoons light corn syrup
2 tablespoons brown sugar
pinch of salt
water to cover fruit
Directions:
Duck:
Score skin side of each duck breast twice in each direction. Bake breasts
at
375 skin side down for approximately 8-10 minutes.
Compote:
Medium dice
apples and add all ingredients (excluding duck) to saucepan.
Cook on low until sauce is reduced by half.
Spoon over duck breast and serve.
